Recipe pastry for a 23cm pieG unsalted butter
Tablespoons plain flour
Tablespoons water
G caster sugar
G dark brown soft sugar
Granny Smith apples - peeled, cored and sliced

Preheat oven to 220 C / Gas mark 7. Melt the butter in a saucepan. Stir in flour to form a paste. Add water, caster sugar and brown sugar, and bring to the boil. Reduce temperature and let simmer.
Roll out the pastry to line the bottom of a 23cm (9 in) pie dish. Fill with apples, mounded slightly. Cover with strips of pastry to form a lattice design. Gently pour the sugar and butter liquid over the pastry. Pour slowly so that it does not run off.
Bake the apple pie 15 minutes in the preheated oven. Reduce the temperature to 180 C / Gas mark 4. Continue baking the pie for 35 to 45 minutes, until apples are soft. Serve apple pie with ice cream or custard.
Apple pie tips
To check the doneness of the pie filling, insert a knife into the centre of the pie. If it meets with little or no resistance, the pie is done.
If the pie is not quite done but the top or edges are becoming too dark, loosely cover the top of the pie with aluminium foil to shield it from the heat.
Omelette
Ingredients
Large free-range eggs
Sea salt
Freshly ground black pepper
Small knob butter
Small handful Cheddar cheese , grated, optional
Method:
Crack the eggs into a mixing bowl with a pinch of salt and pepper. Beat well with a fork.
Put a small frying pan on a low heat and let it get hot. Add a small knob of butter. When the butter has melted and is bubbling, add your eggs and move the pan around to spread them out evenly. When the omelette begins to cook and firm up, but still has a little raw egg on top, sprinkle over the cheese, if using (I sometimes grate mine directly on to the omelette).
Using a spatula, ease around the edges of the omelette, then fold it over in half. When it starts to turn golden brown underneath, remove the pan from the heat and slide the omelette on to a plate.
English porridge
Ingredients
G of porridge oats
1 cup of 1% fat milk
several cups of water to aid cooking!
Directions
Add the oats to a saucepan or a large bowl for microwave, add the milk and about 1 cup of water - either heat the pan or microwave for 2 minutes - keep stiring the pan until it thickens - add more water if it gets too think (both in pan and microwave)
